Flexibility is bending to accommodate a change — adjusting a plan, a schedule or an approach. Adaptability is the deeper capacity to change yourself so you function in genuinely new conditions. A flexible worker shifts their hours; an adaptable one learns the new system when the job itself changes.
The core difference
Both describe handling change well, but at different depths.

The physical senses
Flexibility keeps a literal meaning — bending without breaking — which is why it is the word used of materials and of the body. Adaptability has no physical sense; it belongs to organisms, people and organisations changing to fit their environment, which is where it comes from in biology.
Choosing in writing
For accommodating a request, use flexible. For coping with genuinely new conditions, use adaptable — it claims more, and in a job application that is usually the point.
