Etymology

Of unclear origin. It apparently comes from the dialectal term burgood ("yeast"). Perhaps it ultimately derives from Welsh burym ("yeast") plus cawl ("cabbage, gruel"), or perhaps from Arabic بُرْغُل (burḡul), or else from an alteration of ragout.
