Etymology
Came into English from Middle English souse (“to salt pickle”), also used as a noun meaning “liquid for pickling” or “pickled pig parts”, which developed from Old French sous (“preserved in salt”), from Frankish *sultija (“saltwater, brine”), from Proto-Germanic *sultijō (“saltwater, brine”). It is cognate with Old Saxon sultia (“saltwater”) and Old High German sulza (“brine”).
